"Emergency" Chicken

One of the best tips I can give is to throw some chicken in a crockpot once a week so that there is always cooked protein on hand. Countless times, this chicken has kept me from ordering out, running through a drive thru, or just powering through and not eating at all. The worst of these options for me is the missed meal. It inevitably would lead to a binge later in the day, my mood was not great (hanger is real!), and I would be unable to focus.

We are all busy people. Eating seems to be one of the things that we either skip when time doesn't allow for cooking. Or we seek out the most convenient option, which usually isn't the most nutritious option. Today was one of those busy days for me. Back to back meetings, work, laundry, and various other chores before I get to head out to the boat show with my hubby (nothing like a little yacht shopping on a Friday night to manifest your dreams 😉).

Shredded chicken is a faithful standby and I'm so glad we have found each other again. In addition to the chicken, there are always open things in the fridge that need to get used up. Today, it was a bit of tomato paste, a partial container of beef broth, and an open jar of marinara sauce. Enter chicken parm! I used it to make an open faced chicken parmesan sandwich that was so good!

Eating clean doesn't need to be fancy. Most of the time, my meals are similar to this where I am just trying to use up what is in the fridge and grab something quick. Remember, simple is best. If you are just starting out on your clean eating journey, simple is going to be the thing that keeps you on track in the beginning. I hope these ideas help you!   • chicken salad on cucumber slices

  • buffalo chicken stuffed peppers

  • chicken caesar salad

  • BBQ chicken pizza

  • chicken tacos

  • chicken bacon ranch wrap

Ingredients

  • boneless skinless chicken breasts and/or thighs

  • bone broth, stock or water

  • salt and pepper

  • any other seasonings you like

Directions

  • Add chicken to crockpot and season well

  • Pour broth or water over chicken, almost completely covering the meat

  • Set crockpot to low and cook 4-6 hours or until it reaches an internal temp of 165°

  • Let cool, shred, and store in an airtight container in the fridge for up to 5 days
