Lobster & Crab Rolls

When I first started Clean & Delish, I would find myself looking for "impressive" ingredients when they were on sale. It allowed me to continue the charade that we were living a life that a lot of people on the internet pretend to have. As you've recently read, we are not those people and I am more interested in being honest and open, not faking it online because of what some people might think.

I have been staring at these crab legs and lobster claws in my freezer for months, embarrassed to even have them. No use dwelling on that though, so I opted to make the best of my decision. Lobster and crab rolls! By no means am I saying that I will never buy these things again. When I do, it will be for different reasons.

Shellfish is one of my favorite things in the world. If you were to ask me what my last meal would be, crab legs would certainly be part of the conversation. The sweet crab and lobster meat is a hard one to resist for me. I know that lobster rolls are typically mayo or butter, but who says I have to choose?! I went with both for this seafood salad and I am so glad I did!

I warmed up the meat in some ghee, just to coat them and take the chill off. I then mixed it with the celery and dill, and some of my homemade mayo. We slivered the tops off of some Organic Bread of Heaven hotdog buns (use code kateandersen for 10% off), brushed those with ghee and toasted them in the oven. I then took the seafood mixture and piled it high. These were a home run! Indulgent, but all clean and delish.


Ingredients

  • 2 tbsp ghee or butter

  • 1/2 cup crab meat

  • 1/2 cup lobster claw meat

  • 1/4 cup celery, diced

  • 1/4 mayonnaise (see my recipe here)

  • 2 tsp lemon zest

  • 1 tbsp lemon juice

  • 1 tsp dill

  • salt

  • pepper

  • 4 hot dog buns

Directions

  • Remove all meat from the shells (or drain if using canned or frozen) and pick through to ensure all shells and tendons have been removed. Chop or tear the meat into large chunks and set aside.

  • In a large bowl, mix together the celery, mayo, lemon zest and juice, and your seasonings. Taste and adjust as necessary.

  • Cut and butter your hot dog buns and place in the broiler on low heat for 3 minutes, watching carefully to ensure they don't burn.

  • In a large skillet over medium low heat, melt the ghee. Add the lobster and crab meat and cook until warmed through, stirring gently to coat the meat in the ghee, about 2 minutes. Using tongs or a slotted spoon, remove the meat from the pan, leaving any liquid behind and add to mayo mixture.

  • Pile the rolls high with your seafood salad and enjoy!
